Mango Sago is a refreshing and satisfying summer dessert that originated in Asia. It consists of a creamy mango pudding topped with cooked tapioca pearls. The recipe is easy to make, requiring only a blender or food processor to blend the mangoes, coconut milk, condensed milk, and vanilla extract. The mixture is then chilled in the refrigerator until ready to serve.

To make Mango Sago, the first step is to peel and chop four ripe mangoes and remove the pits. Also, if a filling such as tapicoa is desired, you need to cook 4 cups of water with a quarter cup of small tapioca pearls until they are transparent and chewy. Then, you need to drain the pearls and rinse them in cold water in order to get the right texture. Lastly, you can either use the cooked tapioca pearls as they are or add them to the mango mixture for extra texture and flavoring.
